2021 Aged to Reflection is the fourth exquisite bottling of our dry red blend. Crafted with precision and passion, this exceptional wine is a harmonious blend of Aglianico, Cabernet Sauvignon, and Petite Sirah, sourced from the heart of the Texas High Plains AVA.
The grapes were fermented in a stainless steel tank, setting the stage for a wine that captures the very essence of its terroir. To extract the full character of the grapes, we conducted a 24-hour cold soak before inoculation. During the subsequent nine days of fermentation, the grape skins remained in close contact with the juice, enriching the wine with depth and complexity. But we didn’t stop there; we took the extra step of incorporating toasted oak chips during the primary fermentation, followed by a Malolactic fermentation to add an extra layer of flavor and texture.
The journey of this wine continued with ten months of aging in a carefully balanced mix of European Oak and American Oak, creating a harmonious blend of tradition and innovation.
As you pour a glass of the 2021 Aged to Reflection, you’ll be greeted by a medium-deep ruby garnet color that catches the eye. And when you raise the glass to your nose, a delightful bouquet awaits, brimming with notes of raspberry, plum, strawberry, and cedar.
But it’s in the mouthfeel where this wine truly shines. The flavors are beautifully balanced, confirming the presence of jammy black fruits, cherry, and plum, ensuring that every sip is a journey of delight. Solidly structured dusty tannins and a medium-plus acidity make the 2021 Aged to Reflection a natural companion for a diverse range of dishes. From rich red meats to hearty Italian recipes and an array of creamy cheeses, this wine enhances your dining experience and makes each bite a memorable one.
In a testament to its quality and craftsmanship, the 2021 Aged to Reflection was honored with a silver medal at the 2023 TEXSOM Awards in May. This prestigious competition featured over 2,300 entries from 25 countries and 19 U.S. states, each one evaluated with the utmost care and expertise. Blind-tasted and judged by 42 renowned tastemakers from across the country, these awards recognized the excellence of 1,677 entries, including our very own 2021 Aged to Reflection.
